Hawker Chan Restaurant - Cheap Soya Sauce Chicken noodles by one Michelin Star Chef
Hawker Chan Hon Meng's rags to riches story is every aspiring hawker's fantasy. He conscientiously serves good food at his Liao Fan Hong Kong Soya Sauce Chicken Rice and Noodle at Chinatown Food Complex. One day, a Michelin inspector tasted his food, loved it enough to award a Michelin Star. It attracted so much attention that Hersing Culinary partnered Mr Chan and opened his first 80 seater flagship restaurant in Smith Street. Thereafter, a few more restaurants started mushrooming across the island and the one that I tried was at Toa Payoh Hub. It is important to highlight the particular outlet because after reading a few other blogs, I realised that the standard of food (what is nice or what not) differs slightly across the outlets.

The first thing that captured my attention was the PRICE! I was very pleasantly surprised to discover that Hawker Chan did not increase the price very much at his air-conditioned restaurant! One plate of Soya Sauce Chicken Rice costs as low as $3.80!

It is a no frills restaurant. You queue to order, you wait for your food and you take it back to your seat. Think - Food Court style. My chicken drumstick with roasted pork noodles looked very appetising. It was definitely delicious. The stars for ME were the roasted pork and noodles. The soya sauce chicken was delicious but it is not difficult to find delicious soya sauce chicken in Singapore. It is challenging to find roasted pork with crackling skin and moist meat and Hawker Chan's version was just that!
Springy Noodles |
The noodles were springy and definitely the product of a highly skilled chef. I also found the sauce delicious and well-balanced. Did I enjoy the dish? Of course! Was it an out-of-the-world experience? No. These two questions will help you decide should you see a long queue.

Look at the generous amount of soya beans! I love the idea of eating rice with soya beans. The only drawback was the fact that there was simply too much sauce poured over my rice. It was overwhelming every other taste. The sauce was on the sweet side and I generally dislike sweet sauces.

The Wanton Soup is cooked Hong Kong style with prawns mixed with the meat. The taste of it reminded me of Siew Mai.
